Mississippi Mud


Completely SCRUMPTIOUS! If you are a chocolate lover, well this is your recipe. So. Good.

For cake:
  • 1 cup butter or margarine
  • 2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • Pinch of salt
  • 4 eggs, beaten
  • 1 tsp. vanilla
  • 1 and 1/2 cups all-purpose flour
  • 2 cups chopped pecans (optional--and we did not opt!)

Preheat oven to 350 degrees. Grease and flour a 9 x 13 baking pan. Melt butter in a saucepan, remove from heat, and set aside. In a mixing bowl, stir together sugar, cocoa and salt. Slowly add in the melted butter to this sugar mixture. Stir together. Next, stir in beaten eggs and vanilla. Then add flour, and if you want, the pecans. Stir until all is combined. Spread the batter into the pan and bake for 35 minutes.

For Frosting:

  • 1/2 cup butter, melted
  • 1/3 cup unsweetened cocoa powder
  • 1 box powdered sugar
  • 1/2 cup milk
  • 1 (6 oz.) package miniature marshmallows

Melt the butter in saucepan and stir in cocoa powder. Then stir in about half the box of powdered sugar. Add milk and stir until smooth. Continue stirring in enough powdered sugar to thicken it up. Try to get it to almost spreading consistency but still able to pour it out of the pan a bit. Sprinkle the marshmallows over the hot cake immediately after you remove it from the oven. Let stand for 15 minutes. Next, spread frosting on top of marshmallows. Let cool completely and then cut into squares.

Clean up should be a breeze. Hand out spatulas, spoons, and bowls for licking to any willing participants. Have an insulin injection on stand by. Enjoy!! :)
