Lemon Cookies

• 1 box Pillsbury lemon cake mix (this is what my sister ALWAYS used)
• 1 egg, partially beaten
• 2 1/4 c. Cool Whip
• Confectioners sugar

Mix Cool Whip in with cake mix.  Add egg and mix well.  Roll by teaspoonfuls in sifted confectioners sugar.  Bake at 375 degrees for 7-10 minutes (just until edges turn light brown).  Yields 5-6 dozen. 

That's good to know, because you'll probably eat the first dozen all by yourself as soon as you bring them from the oven. :)
